The mill
Virgen de la Oliva is an agricultural cooperative: a mill owned by the farmers who bring it their olives.

Since 2000
Seventeen growers from Espejo founded the company with an aim we still repeat: to pursue excellence in extra virgin olive oil.
Today we are 89 members. Together we bring in around 6 million kilos of olives each season, from groves in Espejo, Castro del Río and Córdoba.
The mill is two kilometres from the village on the road to Nueva Carteya.
How we work

Reception
We weigh every trailer and unload it into one of four hoppers, keeping varieties and qualities apart.

Cleaning
Two lines remove leaves, twigs, soil and stones before milling.

Milling
Two milling lines crush the whole olives and slowly stir the paste.

Separation
The centrifuge separates the oil by weight. Up to 160,000 kilos of olives every 24 hours.

Cellar
The oil rests in stainless steel tanks holding up to one million kilos.

Bottling
We fill the glass and PET bottles and the tins right here.

Zero waste
With support from the EAFRD and the Regional Government of Andalusia we built a composting plant and made the mill more energy efficient. What's left after the harvest goes back to the groves as fertiliser.
